I hope you are all having a fantastic bank holiday Monday:)
It is such a gorgeous day here today but there is no doubting that winter has well and truly began. Recently it has been sooo cold 🙁 , but while it makes me sad that summers over for this year one thing we get to look forward to is some good hearty comfort food. I must admit by this time of the year I’m glad to be putting down the lettuce leaves lol, and there’s nothing quite like a nice hot bowl of soup to warm your bones. I’ve become slightly obsessed with pumpkin soup. I literally have it everyday!!! I just kind of winged the recipe and was super impressed with the result so I thought I would share it with you guys. Its easy peasy and a great way to get your veggies in. It also makes up a huge pot so just freeze it and you have a healthy ready-made lunch.
2 Cloves of Garlic
2 Butternut Pumpkin
2 Vegetable Stock Cubes
1 tsp Cumin
1 tsp turmeric
Knob of Butter
Salt & Pepper to season
I start out by washing, peeling and chopping all my veggies into chunks(not too big) before I start to cooking.
Tip- Chop, separate and pop leek into a bowl of water while you prep other veg, this will allow any grit caught in between layers to be washed off before cooking it.
Melt a knob of butter in a large non-stick pot, drain leek and add to the pot with onion,cook for 5 or until soften. Add garlic and cook for another minute.
Next Add all of your prepared veggies give it a good stir and cook for a further minute.
Lastly add enough water so veg is just covered. Add stock cubes, cumin and turmeric.
Season with some salt & pepper.
Bring to the boil, cover and simmer for 20 mins or until veg is cooked and blend.
Tip- if you prefer sweet rather than spicy, add nutmeg instead of turmeric and cumin.
Wallah!!! there you have it. Serve with some fresh bread and a splash of cream. So tasty and healthy, perfect to get you through these cold winter days.
